Below you can find an overview of the notable changes between patches, including notable "episode" releases. Feel free to let me know if I've missed something, or if there's anything you'd like to add. These patch numbers are from the US distribution. Little information is available online about the older versions, so I'd be grateful for anybody that has more information or can provide more context.
Episode 1: Light and Darkness (ps0001, 18th December 2007)
Max level: 50
Max skill rank: 3
The basic game - no gear enhancement or orange stat rerolling existed.
Groups were limited to 7-player parties.
Guilds did not yet exist
Only Easy and Normal mode was selectable by players, thus the max level of 50.
Episode 2: The Dragon Strikes Back (ps0004, 11th January 2008)[super][toanchor]1[/toanchor][/super]
Max level: 60
Max skill rank: 3
Hard and Ultimate mode available to players.
Freezing Mirage and Haruhion were added to the game.
Fantasma and Cloron dragons were added to the respective dungeons.
Lv5 Lapis was made available from Stigma and Aurizen Ruin.
Episode 3: Guidance of Goddess (ps0014, 9th May 2008)
Max level: 60
Max skill rank: 3
Deep Desert Lv1, Lv2 and Stable Erde maps were added to the game, along with the Invasion system for accessing these maps via D-Water altar ownership.
The guild system was implemented.
Legendary gear (5 slots) were made available.
Accessory and dual-stat lapis were added as drops.
Helmet Lapis Lv1 were added to the game, accessible via the Helmet Lapis Pocket. These were only obtainable through in-game events, or via promotions in the item mall.
User interface graphics were overhauled to what most people now know as the Ep4 interface. This is when the title screen officially labeled itself as "Eternity".
The vault guild had a makeover.
Oblivion Insula is implemented, allowing players to obtain Lv6 Lapis.
The auction board was added to the game, allowing players to trade items for gold via the notice board. Prior to this, players had to trade in-person via personal shops, or through trading.
